Detailed Description

This cheese has a light, soft, semi-sweet, very clean and complex aroma with a long nutty and butterscotch finish.

Texture:

  • Semi-hard; cooked,pressed
  • Slightly yellowish with visible fenugreek seeds throughout.

Affinage:

  • 2-3 weeks, wiped and turned daily
  • Cellar aged at 58º F and 85% RH

Facts:

  • Typically 9” or 18” diameter and 3.5" height
  • 9lb and 20 lb (approximately) wheel sizes
  • Available all year
