This collection is not just a great deal. It is also a way for us to say thank you for your support in 2009 and to share some of our private reserve cheeses not available anywhere else. We are confident you’ll approve of the results.

Rimrocker - We introduced this cheese earlier this year and it has been extremely well received. It is made with cows’ milk from a nearby farm in Central Oregon and the extra aging (12 months) in our cellar makes it a superb cheese. The cheese has a semi-hard patte; it has a dense, rich flavor with hints of a caramel finish. We recommend pairing it with an old growth Zinfandel

Tumalo Reserve - Our flagship Classico has been made in larger size wheels and given extra time to age in our high desert cellar. The nutty, honeysuckle flavors and the complexity of protein crystalization developed after 12 months of love and tender care is absolutely stunning. We highly recommend sharing with no one but your soul mate and pairing it with a bottle of the finest Pinot Noir you can find.
