Detailed Description
This is a firm farmstead goats milk cheese made with a local microbrew. It has a tangy, mild to sharp flavor with an echo of cascade hops as the finish. This is a very popular cheese in our collection.
Texture:
- Semi-hard; cooked,pressed
- Slightly more tiny holes due to the beer
Affinage:
- 2-3 months, wiped and turned daily
- Cellar aged at 58º F and 85% RH
Facts:
- Typically 9” diameter and 3.5" height
- 9 lbs (approximately) wheel size only
