Detailed Description

This is a firm farmstead goats milk cheese made with a local microbrew. It has a tangy, mild to sharp flavor with an echo of cascade hops as the finish. This is a very popular cheese in our collection.

Texture:

  • Semi-hard; cooked,pressed
  • Slightly more tiny holes due to the beer

Affinage:

  • 2-3 months, wiped and turned daily
  • Cellar aged at 58º F and 85% RH

Facts:

  • Typically 9” diameter and 3.5" height
  • 9 lbs (approximately) wheel size only
  • Available all year
  • Sold by the pound, shipping and handling not included
