Undecided what to order? Try the sampler of our cheeses and then decide what you like best. It includes approximately 8 oz of each of our five top selling cheeses (approximately 2.5 lbs total). Here is the list of the cheeses included and how to pair them with wine and beer.

Capricorns - Zesty rainbow peppercorns add a citrus touch and a finish of a pleasant spicy bite. We suggest pairing it with an earthy, full body Syrah.

Classico - Our flagship cheese is handmade and cave aged. Its nutty and honeysuckle flavor finish stands out magnificently. Enjoy it with a buttery Chardonnay or a semi-dry Pinot Gris.

Fenacho - Exotic fenugreek seeds provide a nutty, semi-sweet flavor enhanced by a hint of butterscotch. It is absolutely delightful with a fine Pinot Noir.

Pondhopper - This semi-soft cheese is made with a local high desert microbrew. It is uniquely spiced with an echo of Cascade hops. Complements a robust ale.

Remembrance - Vibrant high desert rosemary provides a pleasant floral aroma and a lenghthy finish. It pairs exceptionally well with a Sauvignon Blanc.
